This recipe for no-bake chocolate oatmeal cookies combines the hearty texture of oats with the rich sweetness of cocoa powder, all without the need for an oven!
Ideal for busy days or when the kitchen is just too hot, these cookies are not only easy to make but are sure to be a hit with everyone.

Cook time: 30 minutes from weighing out to setting and being ready to enjoy
Ingredients
- 120 g butter (I used salted)
- 300g granulated sugar
- 90g light brown sugar
- 110ml milk
- 4 tablespoons cocoa powder
- 1 pinch of salt
- 100g smooth peanut butter
- 1 teaspoon vanilla
- 280g quick-cooking oats (if you use traditional oats you may need to increase the amount slightly)
Method
- Add the butter, sugars, milk, cocoa powder and salt into a saucepan and bring to a rolling boil and hold for 1 minute, before taking off the heat.
- Add the peanut butter into the hot mixture and stir until melted, then add the vanilla, and stir again. Mix in the oats, until they are completely coated and drop tablespoonfuls onto baking paper on a tray, so they maintain a mound shape.
- Leave to cool until set and enjoy!
Additional recipe tips
We tried a couple of recipes before we got to this one. Even doing the same recipe twice, the results didn’t turn out the same, so don’t be alarmed if it works perfectly on one occasion and then not so, the next time you come to make them.
You can see my first attempt below didn’t turn out quite like I hoped! The flavour was equally delicious, but they were so wet once made. They came out like pancakes and were impossible to eat without a teaspoon, whoops!
