Recipe for White Chocolate and Strawberry Cheesecake

Nothing spells summer quite like a light and very British kind of cheesecake. This no-bake recipe is really simple to make and doesn’t require very many ingredients. If you’re more of a raspberry lover, you can swap out the strawberries – the combination possibilities are many. 

Ingredients

  • 300g digestives (own-brand digestive biscuits are great for this)
  • 150g unsalted butter
  • 300g Choc Affair classic white chocolate
  • 500g full-fat cream cheese (own-brand works fine for this)
  • 75g icing sugar 
  • 1 tsp vanilla extract
  • 300ml double cream
  • Punnet of strawberries

Method

To make the biscuit base

  1. Break up and crush the biscuits in a large bowl with the end of a rolling pin.
  2. Melt your butter and mix into the biscuits, then press down into a 20cm greased spring form tin.

To make the cheesecake filling

  1. Melt the chocolate carefully in a heat-proof glass bowl over a pan of boiling water.
  2. Whisk together the cream cheese, icing sugar, and vanilla until smooth. Add the melted chocolate, mixing to combine.
  3. Add in the double cream and continue to whisk until thick. Then spread the mixture over the biscuit base, and pop it in the fridge for 4 – 5 hours to set.

Decorate with fresh strawberries and serve with double cream for pouring!

Additional recipe tips

Don’t try to go for a low-fat cream cheese, you need the full-fat version instead.
