Nothing spells summer quite like a light and very British kind of cheesecake. This no-bake recipe is really simple to make and doesn’t require very many ingredients. If you’re more of a raspberry lover, you can swap out the strawberries – the combination possibilities are many.
Ingredients
- 300g digestives (own-brand digestive biscuits are great for this)
- 150g unsalted butter
- 300g Choc Affair classic white chocolate
- 500g full-fat cream cheese (own-brand works fine for this)
- 75g icing sugar
- 1 tsp vanilla extract
- 300ml double cream
- Punnet of strawberries
Method
To make the biscuit base
- Break up and crush the biscuits in a large bowl with the end of a rolling pin.
- Melt your butter and mix into the biscuits, then press down into a 20cm greased spring form tin.
To make the cheesecake filling
- Melt the chocolate carefully in a heat-proof glass bowl over a pan of boiling water.
- Whisk together the cream cheese, icing sugar, and vanilla until smooth. Add the melted chocolate, mixing to combine.
- Add in the double cream and continue to whisk until thick. Then spread the mixture over the biscuit base, and pop it in the fridge for 4 – 5 hours to set.
Decorate with fresh strawberries and serve with double cream for pouring!
Additional recipe tips
Don’t try to go for a low-fat cream cheese, you need the full-fat version instead.
