Make this Pancake Day one to remember, and even more scrumptious than the last with our Biscoff and chocolate pancakes recipe! Lashings of caramel sauce and Biscoff will take your pancakes to the next level.
Ingredients:
- 300g self-raising flour
- 1 tsp baking powder
- 3 tbsp caster sugar
- 2 medium eggs
- 300ml whole milk
- 150g chocolate chips (milk/dark/white)
- 2 tbsp melted butter, for frying
To serve:
Biscoff biscuits, caramel sauce, bananas, ice cream.
Method:
- Sift the dry ingredients (excluding the chocolate) into a large bowl. In a separate bowl or jug, lightly whisk together the milk and egg, then whisk in the melted butter.
- Pour the milk mixture into the dry mixture and mix with a fork until you have a smooth batter, nd stir in the chocolate chips/buttons.
- Heat a non-stick frying pan over a medium heat and add a knob of butter. When it’s melted, add a large spoonful of batter. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen slightly. Use all the batter in the same way. We like to make our pancakes thick, and fluffy, so we use small cake rings to hold the shape of the pancake whilst they cook. It makes it a little trickier to flip them, but it does give you a really attractive-looking pancake stack.
- Serve warm, on a plate, with a dollop or two of your favourite icecream, chopped bananas and caramel sauce, and of course a healthy sprinkle of crushed Biscoff biscuits. Delicious!!
