A deliciously decadent way to begin your day? With our chocolate chip pancakes, light creme fraiche and your choice of summer berries.
Ingredients
- 300g self-raising flour
- 1 tsp baking powder
- 3 tbsp caster sugar
- 2 medium eggs
- 300ml whole milk
- 150g chocolate chips (milk/dark/white)
- 2 tbsp melted butter, for frying

Method
- Sift the dry ingredients (excluding the chocolate) into a large bowl. In a separate bowl or jug, lightly whisk together the milk and egg, then whisk in the melted butter.
- Pour the milk mixture into the dry mixture and mix with a fork until you have a smooth batter, nd stir in the chocolate chips/buttons.
- Heat a non-stick frying pan over a medium heat and add a knob of butter. When it’s melted, add a large spoonful of batter. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen slightly. Use all the batter in the same way. We like to make our pancakes thick, and fluffy, so we use small cake rings to hold the shape of the pancake whilst they cook. It makes it a little trickier to flip them, but it does give you a really attractive-looking pancake stack.
- Serve warm, on a plate, with a dollop of creme fraiche, warm the chocolate spread in the microwave and pour over – what a way to start the day.
